Today I was sent a link to HEMA’s website (they are a dutch department store).  They have an imaginitive web-coder, just let the page load and give it 5 secs.  Make sure your sound is turned on.

Here is the recipe, for those that want it.  I did this for the family on New Year’s Eve, a great winter warmer and perfect for small gatherings.  I did double the amount in order to feed 7.5 (Toby was .5 :) ) apart from not doubling the jalapeno peppers in order to reduce the spicy heat a little.  This double also provided enough to feed 3 more people on another evening so more like food for 10-11 people.

I also cook this in the slow cooker, on High, for four hours.  We find this works better and allows the ingredients longer to mix flavours.

Ingredients
300 g sweet potatoes
1 tbsp extra-virgin olive oil
1 onion, finely chopped
1 red pepper, finely diced
25 g jalapeno peppers, chopped
1 tbsp ground cumin
1 tbsp ground coriander
Pinch crushed chilli flakes
400 g can black-eyed beans
400 g can kidney beans
400 g can chopped tomatoes
3 tbsp runny honey
3 tbsp white wine vinegar
450 ml vegetable stock
200 g can sweetcorn kernels
To serve
150 ml Tesco Healthy Living Creme Fraiche
2 tbsp chopped coriander
Juice and zest of 1 lime
100 g plain, unsalted corn chips

Method

  • Carefully chop the sweet potato into 1cm (½in) cubes. Next pour the extra virgin olive oil into a large, flameproof casserole dish and heat. Add the onion and sauté for 2-3 minutes. Then stir in the sweet potato, red pepper, jalapenos, cumin, coriander and chilli and saute for a further 3-4 minutes.
  • Add the remaining stew ingredients and simmer uncovered for 20-30 minutes. Cover, then simmer for a further 35-40 minutes.
  • While the stew is cooking, combine the creme fraiche, coriander, lime juice and zest and refrigerate until ready to serve.
  • Using a ladle divide the stew between individual bowls and then top with a dollop of the creme fraiche mixture. Serve with the corn chips.

My Mum has been doing a lot of work on her/our family tree (Dale’s & Allen’s), and I have been doing a little :) .  Mostly I have been entering the data into Family Tree Maker 2008 (a useful package).  I will start to post information here as the family might be interested.
